Breakfast Of Champions

Wow, what a girls weekend, there was lots of dancing and carousing and gossiping! So now that life goesback to its normal everyday routine I figure I should spice something up, why not my breakfast?  I found the most delicious looking idea on What Katie Ate, baked eggs. They are quick, healthy and you can be totally creative and add whatever you like to them!

The recipe is pretty free form
Grease your oven proof ramekin dishes and preheat oven to 350 degrees
line dishes with prosciutto or ham (about 2 slices)
add a slice of goats cheese on top.
separate 2 egg whites (save the yolks) beat egg whites with 2tblsp heavy cream
pour over cheese and add the egg yolks in centre of the dish, season with salt and pepper
now feel free to add whatever you like!
roasted tomatoes
baby spinach
basil leaves
roasted tomatoes
cooked bacon
feta cheese
or anything you think would be yummy that's leftover in your fridge!

Have a brunch party, let guests create their own baked egg dishes, while you all sip mimosa margarita's and nibble on fresh fruit!
